Roasted root veggies with toasted chickpeas on pureed cauliflower, topped with a roasted red pepper sauce…

This was delicious the first night, and the leftovers reheated beautifully! I steamed the cauliflower while veggies were roasting, and used my air fryer to toast the chickpeas. Veggies were tossed with olive oil, salt, and crushed rosemary. The chickpeas had salt and smoked paprika seasoning, and I included some cream, roasted garlic and salt in the cauliflower puree.  I also squeezed a little lemon juice on the veggies.
